Mini eggplant pizzas

You will need: 1 Eggplant Fresh Mozzarella Turkey pepperonis or sausage (your choice) Favorite veggie toppings (onions, mushrooms, peppers, etc) Garlic

Dice all of your veggies and garlic! Slice up the eggplants to about 1/4 inch thick round slices, rub with olive oil and whatever spices you'd like, place on a baking sheet, and bake until browned, 6 to 8 minutes, turning once.

Dayton Food Photographer | www.chelsea-hall.com | Dayton PhotographerRemove eggplant from the oven and top with ingredients (mozzarella, veggies, and precooked turkey pepperoni or sausage). Place back into oven until cheese is nice and melty. Remove from oven, plate, and enjoy!
